TGIF

This week has been a little tough. One day while washing my hands about a hundred times in between making gluten food and gluten free food, and cleaning the counters over and over I realized, there are only 2 places I will ever feel completely relaxed eating again in my life, my house and my mothers house. Aside from my being gluten free, my daughter is allergic to nuts, so if I'm not worrying about her, I'm worrying about my food. It's a lot of work to prepare all my meals now and I always enjoyed going out to eat or to someone's house, but it will never be the same. No more just enjoying cocktails and someone else's cooking. Boy...I miss just eating and not worrying! It seems the tables have turned and now the most relaxing meals are those I prepare.

Week 6 Gluten Free

I knew being gluten free was not going to be easy but some of the obstacles that I've hit I wasn't prepared for. Two of my largest obstacles are, frequently suffering from low blood sugar between meals and rapidly gaining weight. I honestly thought I would loose weight eating like this since my plan was to eat as natrually gluten free as possible, boy was I wrong. I guess I know why I've been so skinny for the last few years! I thought this is awesome, I lost weight by having a baby! Boy did this gluten free diet show me. My plan is to step up my exercising a notch and to keep experimenting with different fruits and veggies. From what I'm reading this is a common thing that happens when people go gluten free. Where it may be a diet for some who just go gluten free as a "fad diet", there are some of us who are just watching the scale rise and we have no choice about being gluten free. Uggh!
My second issue of low blood sugar - I've always had lower blood sugar my whole life but since going gluten free, I suffer from several bouts of it a day. I do admit I go for a quick fix of a hard candy which isn't the best. I don't know why it's happening, I didn't eat a lot of carbs prior to being gluten free, but there is definitely something that I need that I'm not getting now. If anyone else has experienced this, I'd love to hear how you fixed what I call "the sugar shakes".
I spent last week visiting family in NY. I went to Uncle Giuseppe's in Smithtown. They had a great selection of gluten free products, not as much as Whole Foods, but some different ones that aren't offered at Whole Foods.  My favorite find was the muffins from The Really Great Food Company. All their products are also nut free which is great for my nut allergic daughter.

Welcome

I've encountered many events and come across many people in my life that I've often wanted to write about...but never got started. When I encountered my latest event, my celiac diagnosis, I thought, hey, why not. In reasearching celiac during my diagnosis and through the start of my diet, I could not have gotten through it nor could I get through everyday now without all of the Celiac and Gluten Free blogs out there.
